A major advantage of sprinkling is that production cycles are shorter.
Due to the faster heating and cooling of the process water, more
cooking processes can be carried out in a shorter time. In addtion,
heat distribution can be optimized by rotational or horizontal move-ment,
which further accelerates sterilization or pasteurization pro-
cesses. Which movements are possible depends on the design
of the sprinkling autoclave.
A major advantage of sprinkling is that the shock moment of the
products due to the sudden contact with hot water is eliminated, thus
preserving many more valuable nutrients. Since heating, holding and
cooling, as well as the exact temperature and pressure, can be specifi-
cally controlled at any time in sprinkling autoclaves, you can achieve
consistent and high product quality. The targeted measurement of the
F-value also ensures optimum product safety.
Combined with test cooking, as offered by Voss for example, recipes
can be created, tested and optimized outside the production facilities.
After all values have been incorporated into the recipe and the result
meets expectations, these values are transferred completely into the
