natürliche Farbe von Omya ist das Purple Sweet
Potato Concentrate. Der Extrakt aus der Kartoffel-
Knolle bietet mehr Stabilität als die fruchtbasier-ten
Anthocyane. Die Farbnuancen von pink bis
violett sind vom pH-Wert der Anwendung abhän-gig.

Dried tomatoes, lemon and orange zest, basil, rosemary and a subtle
hint of apricot can be used to enhance a variety of vegetarian and
vegan skewers or meat and fish, in addition to vegetable and cheese
parcels. In “Mr. Garlic Pepper“, roasted garlic, black and green pepper,
paprika paste, coriander, oregano and maple syrup lend a balanced
spiciness to steaks, grilled and stir-fried dishes. Both marinades contain
no added palm ingredients, allergens or declarable additives.
Spicy quartet
With a quartet of new quicksoft marinades, Nubassa has been at the
start of 2021. “Chimichurri CL/AF“ is a spicy herb marinade based on
an Argentine recipe, traditionally served with grilled beef and steaks or
used for pickling. “Canadian CL/AF“ with maple syrup, chili and garlic
transports taste buds to the land of the eternal forests. “Welde No1
Slow Beer Pils“ expands the range with a hearty seasoning sauce with
Pils from the Baden brewery Welde, “GinTastic CL“ plays with a strong
gin-juniper note to give poultry specialties a sophisticated taste.
As a topping for hot dogs, pasta or convenience products, Hydrosol
offers a stabilization system for the production of spreadable cheese
analogs from the tube. These offer a creamy mouthfeel even with
a low cheese content of 20 percent. In addition, the cheese preparations
can be consumed either hot or cold. For example, they can be heated
to about 40°C before consumption and also adhere very well to warm
pasta.
From dairy drinks and vegetable cream for whipping or cooking to
breakfast cream and yogurt products for spooning or drinking, the
functional systems from the Stabisol and Stabimuls series enable a wide
range of cost-reduced recipes. These include various pudding variants
with a creamy mouthfeel and silky glossy appearance. For example,
a continuous heat exchanger and a high-pressure homogenizer can be
used to produce economical puddings based on skim milk and sweet
whey powder. By changing the filling temperature and dosing the
stabilization system, the texture of the end products can be individually
adjusted.
Systems for meat and sausage
For the meat processing industry, Hydrosol offers solutions that improve
the quality of meat and sausage products as well as continuity and
reliability in the manufacturing process, even with fluctuating meat
qualities. Economical formulations for sausages and cooked cured
meats, for example, can be produced using the all-in compounds from
the HydroTop CS range. The systems are suitable for a wide range of sau-sage
products - from scalded sausages to large-caliber cold cuts such as
mortadella to grilled and fried sausages. They can also be used for cooked
cured products. Recipes can be customized depending on the meat con-tent.
In addition, the products function independently of the type of meat.
